El Encanto is a family-led project rooted in generations of coffee production. Guided by a shared vision between wife, husband, son, parents, and siblings, the project represents a deliberate shift from traditional coffee farming toward innovation-driven processing. The farm’s evolution began with a full renovation of its crops, replacing conventional varieties with rare and expressive cultivars such as Geisha, Java, Ethiopian, Bourbon Aji, Caturra Chiroso, and Pink Bourbon. These genetics were selected not for volume, but for their ability to communicate terroir, precision, and sensory depth.

Farmers Notes

This coffee was developed through a controlled and intentional natural process, designed to enhance sweetness, aromatic depth, and textural complexity.

● Selection of fully ripe cherries

● 70-hour oxidation in bags

● 60-hour anaerobic fermentation in 210-liter barrels

● Yeast inoculation using fruit pulp

● Thermal shock to stabilize microbial activity

● 48 hours of mechanical drying

● 15 days of stabilization

Each step was calibrated to preserve clarity while allowing fermentation-driven character to unfold naturally in the cup.
