Importers Notes

Zarza Coffee is a third-generation family project rooted in the mountains of Bruselas, the Coffee Capital of Huila. Guided byheritage and a passion for quality, the Gasca family has built a model based on traceability, innovation, and sustainability.
Since 2022, Zarza Coffee has refined every stage of production from selective harvesting to fermentation and drying—ensuring that each lot reflects the family’s dedication to expressive, high-quality Colombian coffee. Beyond coffee, the integration of beekeeping strengthens biodiversity and reinforces the farm’s ecosystem-driven approach.

Farmers Notes

1. Fermentation Process – Washed Method

2. Whole-cherry oxidation: 24–48 hours to enhance sweetness and aromatic complexity. Depulping: Cherries are depulped in clean tanks once optimal oxidation is achieved.

3. Anaerobic fermentation: 24–36 hours in sealed tanks to deepen sweetness and enhance the Bourbon Ají character.

4. Second fermentation (“double-washed” step): Mucilage is allowed to ferment further under controlled temperature.

5. Thermal shock: Hot-then-cold water wash to stabilise the structure and highlight clarity in the cup.
